For a healthy diet it is important to use a varied and diversified diet, which relies on the properties of fruit and vegetables, but also on many other substances beneficial for our health, including olive oil.

According to European legislation, an oil is to be considered extra virgin only if mechanically cold pressed and characterized by an acidity equal to or less than 0.8%, as well as precise parameters of flavor, color, smell and appearance. Compared to other oils, in fact, extra virgin olive oil has a lower degree of acidity precisely because of thecold pressing systemof olives by mechanical processes within 24 hours of harvesting.

Added to this is the fact that the olives are "rigorously" grown with the da methodBiological agriculture, that is, using agricultural production and cultivation methods that use only natural substances. The use ofchemical synthesis substances, such as fertilizers, herbicides, insecticides, is strictly prohibited as it can cause serious alterations to the natural habitat and jointly can negatively affect the healthiness and genuineness of food.

 

According toEC Regulation 1019-2002, organic extra virgin olive oil is obtained, as well as for conventional production, exclusively from olives and solely by mechanical procedures, i.e. through the sole pressure of the olives, this is also confirmed by theRegulation (EU) no. 1169/2011according to which the following wording is mandatory on the label of an organic extra virgin olive tree"Superior category olive oil obtained directly from olives and solely by mechanical means".Furthermore, the addition of any chemical additives is not envisaged.

Supporting this production method means developing a production model that avoids the excessive exploitation of natural resources, respecting some technical principles:

 

  • Exclusion of fertilizers, herbicides, insecticides and allpetroleum products.
